Pan Fried Chicken and Mushrooms

Golden seared chicken and tender mushrooms in a garlic herb butter sauce. Ready in 20 minutes.




  Pan Fried Chicken and Mushrooms

Ingredients

  • 2 large chicken breasts, sliced horizontally (cutlets)
  • 8 oz cremini or button mushrooms, sliced
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 1 tsp garlic powder, salt & pepper to taste
  • 1/2 cup chicken broth or dry white wine
  • 2 cloves garlic, minced
  • 1 tsp dried thyme or fresh parsley
  • Optional: Splash of heavy cream

Directions

  1. Season chicken cutlets with salt, pepper, and garlic powder.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear chicken 3-4 minutes per side until golden and cooked through. Remove to a plate.
  3. In the same pan, add remaining butter and mushrooms. Sauté 5 minutes until browned.
  4. Add minced garlic and thyme; cook 1 minute. Pour in broth (or wine) to deglaze the pan, scraping up brown bits.
  5. Simmer for 2 minutes to reduce slightly. Return chicken to pan and spoon sauce over top to warm through.

Pro tip: Don't crowd the mushrooms in the pan! Give them space to brown properly instead of steaming. Use a mix of wild mushrooms for a deeper earthy flavor.
