Ingredients
2 large chicken breasts, sliced horizontally (cutlets)
8 oz cremini or button mushrooms, sliced
2 tbsp olive oil
3 tbsp butter, divided
1 tsp garlic powder, salt & pepper to taste
1/2 cup chicken broth or dry white wine
2 cloves garlic, minced
1 tsp dried thyme or fresh parsley
Optional: Splash of heavy cream
Directions
Season chicken cutlets with salt, pepper, and garlic powder.
Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear chicken 3-4 minutes per side until golden and cooked through. Remove to a plate.
In the same pan, add remaining butter and mushrooms. Sauté 5 minutes until browned.
Add minced garlic and thyme; cook 1 minute. Pour in broth (or wine) to deglaze the pan, scraping up brown bits.
Simmer for 2 minutes to reduce slightly. Return chicken to pan and spoon sauce over top to warm through.
