Good Old-Fashioned Pancakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1/4–1 teaspoon salt (to taste)
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons butter, melted and slightly cooled
  • Optional: 1 teaspoon vanilla extract

Directions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. Make a well in the center; add milk, egg, melted butter (and vanilla if using). Whisk just until combined; a few small lumps are fine.
  3. Heat a lightly oiled griddle or nonstick pan over medium to medium-high heat.
  4. Pour about 1/4 cup batter per pancake onto the hot surface. Cook until bubbles form on top and edges look set, 2–3 minutes.
  5. Flip and cook another 1–2 minutes, until golden brown and cooked through. Repeat with remaining batter.
