Good Old-Fashioned Pancakes
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 tablespoon white sugar
- 1/4–1 teaspoon salt (to taste)
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons butter, melted and slightly cooled
- Optional: 1 teaspoon vanilla extract
Directions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Make a well in the center; add milk, egg, melted butter (and vanilla if using). Whisk just until combined; a few small lumps are fine.
- Heat a lightly oiled griddle or nonstick pan over medium to medium-high heat.
- Pour about 1/4 cup batter per pancake onto the hot surface. Cook until bubbles form on top and edges look set, 2–3 minutes.
- Flip and cook another 1–2 minutes, until golden brown and cooked through. Repeat with remaining batter.
Pro tip: For extra fluffy pancakes, let the batter rest 5–10 minutes before cooking and avoid over-mixing. Keep cooked pancakes warm in a low oven (about 170°F / 75°C) in a single layer.
