Quesadilla Recipe
Ingredients
- 4 medium whole-wheat tortillas
- 1.5 cups shredded cheese (mozzarella or cheddar)
- 2 cups finely chopped vegetables (bell pepper, spinach, corn)
- 1 cup cooked protein (black beans, shredded chicken, or turkey)
- 1 tsp taco seasoning or mild chili powder
- Olive oil spray or 1 tsp oil for the pan
- Salsa and Greek yogurt for serving
Directions
- Heat a large nonstick skillet over medium and lightly oil.
- Place a tortilla in the pan; sprinkle cheese on half, add veg and protein, season lightly.
- Fold over; cook 2–3 minutes per side until golden and melty; repeat.
- Rest 1 minute; slice into wedges and serve with salsa and Greek yogurt.
Tip: Finely chop or grate vegetables to “disappear” into the cheese for picky eaters while keeping great texture.
