Crispy Cheesy Quesadilla (Easy Skillet Recipe)

Quesadilla Recipe
Ingredients
- 2 large flour tortillas (or whole wheat tortillas)
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/2 cup cooked chicken (optional), chopped or shredded
- 1/3 cup bell pepper + onion, thinly sliced (optional)
- 1–2 tsp butter or oil (for crisping)
- Salt, pepper, taco seasoning (optional)
- To serve: salsa, sour cream, guacamole
Directions
- Heat a nonstick skillet over medium heat. Add a little butter/oil to coat the pan.
- Place 1 tortilla in the skillet. Sprinkle cheese evenly over the whole tortilla (this helps “glue” it together).
- Add chicken/veggies on one half only (if using). Fold the tortilla over to make a half-moon.
- Cook 2–3 minutes until the bottom is golden and crisp. Flip carefully and cook 2–3 minutes more until cheese is melted and the second side is crisp.
- Rest 1 minute, then slice into wedges. Serve with salsa, sour cream, or guacamole.
Pro tip: For the crispiest quesadillas, keep heat at medium (not high), use a light layer of butter, and avoid overfilling—too much filling makes them hard to flip and can turn them soggy.
