Quesadilla Recipe

Ingredients

  • 4 medium whole-wheat tortillas
  • 1.5 cups shredded cheese (mozzarella or cheddar)
  • 2 cups finely chopped vegetables (bell pepper, spinach, corn)
  • 1 cup cooked protein (black beans, shredded chicken, or turkey)
  • 1 tsp taco seasoning or mild chili powder
  • Olive oil spray or 1 tsp oil for the pan
  • Salsa and Greek yogurt for serving

Directions

  1. Heat a large nonstick skillet over medium and lightly oil.
  2. Place a tortilla in the pan; sprinkle cheese on half, add veg and protein, season lightly.
  3. Fold over; cook 2–3 minutes per side until golden and melty; repeat.
  4. Rest 1 minute; slice into wedges and serve with salsa and Greek yogurt.
