Ingredients

  • 2 large flour tortillas (or whole wheat tortillas)
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/2 cup cooked chicken (optional), chopped or shredded
  • 1/3 cup bell pepper + onion, thinly sliced (optional)
  • 1–2 tsp butter or oil (for crisping)
  • Salt, pepper, taco seasoning (optional)
  • To serve: salsa, sour cream, guacamole

Directions

  1. Heat a nonstick skillet over medium heat. Add a little butter/oil to coat the pan.
  2. Place 1 tortilla in the skillet. Sprinkle cheese evenly over the whole tortilla (this helps “glue” it together).
  3. Add chicken/veggies on one half only (if using). Fold the tortilla over to make a half-moon.
  4. Cook 2–3 minutes until the bottom is golden and crisp. Flip carefully and cook 2–3 minutes more until cheese is melted and the second side is crisp.
  5. Rest 1 minute, then slice into wedges. Serve with salsa, sour cream, or guacamole.
