Ingredients

  • 4 salmon fillets (about 5–6 oz each)
  • 3 cups mixed vegetables (asparagus, broccoli, bell peppers, or green beans)
  • 1 lb baby potatoes, halved (or sweet potato cubes)
  • 2 tbsp olive oil
  • 1 tsp garlic powder, 1 tsp Italian seasoning
  • 1 lemon (zest + juice), plus slices to finish
  • Salt & black pepper

Directions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment.
  2. Toss potatoes with 1 tbsp oil, half the seasonings, salt, and pepper; roast 10 minutes.
  3. Push potatoes to one side; add vegetables with remaining oil and seasonings; nestle salmon fillets, drizzle with lemon juice.
  4. Roast 10–12 minutes more until salmon flakes and veggies are tender; finish with lemon zest and slices.
