One-pan sheet-pan salmon with seasonal vegetables — minimal prep, minimal dishes, maximum flavor.
Sheet-Pan Salmon & Veggies
Ingredients
- 4 salmon fillets (about 5–6 oz each)
- 3 cups mixed vegetables (asparagus, broccoli, bell peppers, or green beans)
- 1 lb baby potatoes, halved (or sweet potato cubes)
- 2 tbsp olive oil
- 1 tsp garlic powder, 1 tsp Italian seasoning
- 1 lemon (zest + juice), plus slices to finish
- Salt & black pepper
Directions
- Preheat oven to 425°F (220°C). Line a large sheet pan with parchment.
- Toss potatoes with 1 tbsp oil, half the seasonings, salt, and pepper; roast 10 minutes.
- Push potatoes to one side; add vegetables with remaining oil and seasonings; nestle salmon fillets, drizzle with lemon juice.
- Roast 10–12 minutes more until salmon flakes and veggies are tender; finish with lemon zest and slices.
Pro tip: Keep salmon thickness even; if fillets are thin, add them in the last 8–10 minutes to avoid overcooking. Swap potatoes for pre-cut veg to save time.
