Garlic Parmesan Chicken Pasta
Prep: 10 minCook: 20 minTotal: 30 minServes: 4
Ingredients
10–12 oz pasta (penne, rigatoni, or linguine)
1 lb boneless skinless chicken breast (or thighs), sliced
1 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
1 tbsp flour (helps thicken)
1 cup chicken broth
3/4 cup heavy cream
3/4 cup freshly grated parmesan (plus more to serve)
1/2 tsp salt + 1/2 tsp black pepper
1 tsp Italian seasoning (optional)
1–2 tbsp pasta water (as needed, to loosen sauce)
Parsley, chopped (optional garnish)
Directions
Cook pasta until al dente. Reserve 1 cup pasta water, then drain.
Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden and cooked through; remove.
Lower heat to medium. Add butter, then garlic; cook 30 seconds until fragrant.
Sprinkle in flour and stir 30–60 seconds. Slowly whisk in chicken broth, then cream; simmer 2–3 minutes to thicken slightly.
Stir in parmesan until melted and smooth. Add pasta and chicken back to the skillet and toss to coat.
If sauce is too thick, add splashes of reserved pasta water until silky. Taste and adjust seasoning.

Pro tip: Add parmesan off the boil and use reserved pasta water to emulsify the sauce so it coats the noodles instead of clumping. This technique is commonly recommended in creamy garlic parmesan chicken pasta recipes.
