🧀 Ingredients:
-
2 cups elbow macaroni (or pasta of choice)
-
2 tbsp unsalted butter
-
2 tbsp all-purpose flour
-
2 cups milk (whole or 2%)
-
1 cup heavy cream
-
2 cups sharp cheddar cheese, shredded
-
1 cup mozzarella cheese, shredded
-
½ tsp garlic powder
-
½ tsp onion powder
-
Salt and pepper, to taste
-
Optional: ½ cup grated Parmesan or Gruyère for extra flavor
-
Optional topping: ½ cup breadcrumbs + 1 tbsp melted butter
🍴 Instructions:
-
Boil the Pasta:
Cook macaroni in salted boiling water until al dente. Drain and set aside. -
Make the Roux:
In a saucepan, melt butter over medium heat. Stir in the flour and whisk continuously for 1-2 minutes until golden. -
Add Milk & Cream:
Slowly pour in the milk and cream while whisking to avoid lumps. Cook until the sauce thickens (about 5 minutes). -
Add the Cheese:
Lower the heat and stir in cheddar and mozzarella until melted. Season with garlic powder, onion powder, salt, and pepper. -
Combine Pasta & Cheese Sauce:
Mix cooked pasta into the sauce until evenly coated. Transfer to a baking dish if desired. -
Optional: Bake for Crispy Top:
Mix breadcrumbs with melted butter and sprinkle over the top. Bake at 375°F (190°C) for 15-20 minutes until golden brown.
💡 Tips for the Best Mac & Cheese:
-
Use freshly shredded cheese for a smoother melt.
-
Don’t overcook the pasta — it continues to cook in the sauce.
-
For a flavor twist, add bacon bits, jalapeños, or a pinch of paprika.
