🛒 Ingredients

  • 2 Tbsp olive oil

  • 1 lb boneless, skinless chicken breasts, cubed

  • 8 oz andouille sausage, sliced

  • 2 tsp Cajun seasoning (divided)

  • 2 Tbsp butter

  • ¼ cup onion, chopped

  • ½ cup red bell pepper, chopped

  • ⅓ cup celery, chopped

  • 2 tsp minced garlic

  • 1 cup heavy cream

  • ⅓ cup grated Parmesan cheese

  • 1 package palmini linguine (hearts of palm noodles) om+2


🍽️ Instructions

  1. Sauté chicken: Heat oil in a skillet over medium-high, season chicken with 1 tsp Cajun seasoning, cook until done, then set aside 

  2. Cook sausage: In the same skillet, cook sausage until browned; remove and set aside .

  3. Veggie base: Melt butter, sauté onion, bell pepper, celery, and garlic until softened (~3–4 min) .

  4. Make sauce: Pour in heavy cream, Parmesan, and remaining Cajun seasoning. Simmer until thickened

  5. Combine: Stir in palmini noodles, then return chicken and sausage. Heat through (2–3 min) until everything’s coated in creamy sauce 

  6. Serve: Garnish with chopped parsley or green onions if desired.
