Ingredients

For the Chicken:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)

  • 1/2 cup cornstarch

  • 1/2 cup all-purpose flour

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 2 eggs, beaten

  • Oil for frying

Bang Bang Sauce:

  • 1/2 cup mayonnaise

  • 1/4 cup sweet chili sauce

  • 1 tbsp sriracha (adjust to taste)

  • 1 tbsp honey or maple syrup (optional, for extra sweetness)

Bowl Base:

  • 2 cups cooked jasmine or white rice

  • 1 cup shredded lettuce or cabbage

  • 1 cup shredded carrots

  • 1/2 cup chopped cucumber or bell pepper

  • Green onions and sesame seeds (for garnish)

Instructions

  1. Make the Bang Bang Sauce
    In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey. Set aside.

  2. Prep the Chicken

    • In one bowl, mix cornstarch, flour, garlic powder, salt, and pepper.

    • In another, beat the eggs.

    • Dip chicken pieces in the egg, then dredge in the flour mixture.

  3. Fry the Chicken

    • Heat about 1/2 inch of oil in a skillet over medium-high heat.

    • Fry chicken pieces until golden and crispy (about 3–4 minutes per side).

    • Drain on paper towels.

  4. Assemble the Bowls

    • Divide rice among 4 bowls.

    • Add shredded lettuce/cabbage, carrots, and cucumber.

    • Top with crispy chicken and drizzle generously with bang bang sauce.

    • Garnish with green onions and sesame seeds.
